5 - Drying
The first step during the “cooking” process of iberian Jamón is when it’s salted. We show the transformation of a pork leg into properly Jamón and you can see how Jamón is salted in the Iberian Peninsula since inmemorial times.
6 - The drying or stoving
In this room you will see how Jamón changes during the first 9 months after they have been salted. In this period the salt is evenly distributed over the ham and the heat of summer begins to generate those white betas where that tasty fat is concentrated.
7 - The Cellar
We’re getting close to the end of the process. During the next 36 months Iberian Jamón requires tranquility and gloom. Here it will rest quietly while ripening until it turns into the gastronomic treasure it is.
8 - Designations of Origin
The last room is to explain the different designations of origin which Jamón has and what are its distinguishing features . You will also be given some notions on conservation and carving.
